Dark Chocolate Chocolate Chip CookiesDay 13 of my Baker’s Dozen Cookie Challenge and I am going to have to repost a cookie instead of giving you a good one. It is not because I am cheating on the challenge, it is because I actually made 14 kinds of cookies and the biscotti two ways, but two of the cookies just did not work. The Mexican Wedding Cookie and the Sweet Potato SnickerDoodles recipes I created or followed were plain horrible. I was sad to see them lying in the trash but not sad enough to attempt to pass off the recipes to you as good.

Dark Chocolate Chocolate Chip CookiesOne thing about baking or cooking for that matter, is you know you will fail occasionally, as much as I hate to admit it. It distresses me to see all those beautiful ingredients wasted and I find failure frustrating, to be honest. LOL. It is the perfectionist side of me that likes things to go as planned and I just hate redoing something. But I do admit to learning a lot from my mistakes. Like with the Sweet Potato SnickerDoodles, the sweet potato purée was just too thick and left the cookies overly dense and horrible tasting. I know to thin it down next time I try again. I really am not sure what happened with the wedding cookies. I think it was just the recipe I tried. Not all recipes are good ones.

Dark Chocolate Chocolate Chip CookiesI did not have time to make another type of cookie for you so you are getting a reminder of my Double Chocolate Chip Cookies, which I think are a wonderful way to round out my Baker’s dozen. I am not one to pass up a beautiful cookie loaded with chocolate and cinnamon. YUM! They are also a great cookie for around Christmas time, filled with plenty of warm flavors for dipping into milk or munching with hot cider.

Deep, dark chili pair with dark chocolate cocoa powder and chips and cinnamon to make deliciously soft Dark Chocolate Chocolate Chip Cookies.

Instructions
  1. Preheat oven to 350° F. Line cookie sheets with parchment paper.
  2. Mix the dry ingredients together in a small bowl and set aside.
  3. Cream together the butter and sugar with a mixer. Add the eggs, one at a time, mixing well after each one. Add the vanilla.
  4. Slowly add the dry ingredient mix and mix just until incorporated. Do not over-mix. Gently fold in the chocolate chips.
  5. Using a spoon, place about 1 tablespoon of the cookie dough on the prepared cookie sheet about 2 inches apart. Add a few more chocolate chips to the top of each cookie dough mound, if desired.
  6. Bake for 8 minutes or until the edges are set and the middle is still slightly soft. Cool for 5 minutes on the cookie sheets before removing to continue cooling.
